Salmon Caviar
A pure-canvas canapé that keeps the crisp visible under smoked salmon, cream and briny garnish.
Use very little cream so the crisp remains the architectural base.

- Smoked salmon
- Creme fraiche
- Caviar-style pearls
- Dill
Instructions
- 1. Select one intact crisp for each canapé.
- 2. Add a small fold of salmon and a dot of creme fraiche.
- 3. Finish with pearls and dill while leaving crisp edges visible.
